Set Party to how many named people each invite covers (1 = single, 2 = couple). Allow +1 applies only to a party of 1 — a couple is already two people. Hit Copy for a guest's personal RSVP link: couples are asked how many can attend, singles with Allow +1 can bring a guest. Stats count people, not rows — a couple counts as 2 in "On list" and "Confirmed" (your catering number). Set the guest invite code in Sharing settings.
